Apple-Pear Cake

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 2 tablespoons apple cider
  • 1/2 teaspoon vanilla extract
  • 2 apples, such as honey crisp, cored
  • 2 ripe pears, cored
  • 1/3 cup buttermilk
  • 1/2 cup butter, (1 stick), melted

Method

Preheat oven to 350°F. Line large 12-inch cast-iron skillet with parchment. In large bowl
combine flour, baking powder, cinnamon, ginger and salt. In medium bowl beat eggs, sugar,
apple cider and vanilla. Set aside.

Dice 1 apple and 1 pear. Thinly sliced remaining apple and pear. Combine flour mixture with
egg mixture. Stir in buttermilk and melted butter; stir until just combined. Stir in chopped apple
and pear. Spoon mixture into prepared skillet. Arrange apple and pear slices on batter. Bake 55
to 60 minutes or until golden browned and toothpick inserted in center comes out clean. Serve
warm. Sprinkle with confectioners’ sugar. if desired, serve with vanilla ice cream.
