- 1 cup water
- 1/2 cup butter
- 3 Tbsp granulated sugar
- 1/4 tsp salt
- 1 cup all-purpose flour
- 4 large eggs
- vegetable oil for frying
- confectioners' sugar
In medium saucepan combine water, buter, granulated sugar and salt. Over high heat, heat to boiling. Remove from heat; stir in flour. Return pan to heat and stir constantly until mixgture forms a ball, about 3 to 5 minutes. Remove flour mixture to a large bowl.
With mixer at low speed, add eggs, one at a time until completely incorporated.*
Meanwhile, over medium heat, heat 2 inches oil in saucepot to 375F. With 2 small spoons, carefully drop 1 tablespoonful dough at a time into hot oil. Fry dough in batches, turning dough over in soil. With slotted spoon, remove zeppoles to paper towels to drain. Repeat with remaining dough. Sprinkle with confectioners' sugar. Serve immediately.
* Mixture can be covered and refrigerated until ready to use.
