Holiday Sugar Cookies
Cookies:
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
Icing:
- 4 cup confectioners’ sugar
- 1 egg white
- 6 tablespoons water
Method
Prepare cookies: In large bowl combine flour, baking powder and salt; set aside. In large bowl with electric mixer at high speed, beat butter, sugar and vanilla until creamed and smooth. Add egg; beat until well blended. Add flour mixture; beat until just blended. Shape dough into a ball: cover and refrigerate 1 hour.
Preheat oven to 350°F. With rolling pin, roll dough to 1/4-inch thickness. Cut into desired shapes with cookie cutters, rerolling scraps. Place on baking sheet, 1-inch apart. Bake cookies 10-12 minutes or until just golden around edges. Cool on racks.
Prepare icing: In large bowl combine confectioners’ sugar and egg white; add water, 1 tablespoon at a time until smooth. Use to decorate cookies.
