Swedish Visiting Cake
(Recipe from Dorie Greenspan)
- 1 cup granulated sugar, plus 2 tablespoons for topping
- Grated zest of one lemon
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1 stick melted butter, (8 ounces) cooled
- 1/4 cup sliced almonds
Method
Preheat oven to 350°F. In large bowl combine sugar and grated lemon zest; rub between fingers to release oils.
Whisk in eggs one at time, vanilla, almond extract and salt. Stir in flour; fold in butter. Stir just until combined. Spoon into 9-inch greased cake pan. You can also use a 9-inch cast-iron skillet. Top with sliced almonds; sprinkle with remaining sugar. Bake 25-30 minutes until golden and slightly crisp on outside.
Serves 8
